Succinylated Monoglycerides (E472G): What It Is and Is It Safe?

Emulsifier
Mono- and diglycerides of fatty acids esterified with succinic acid, used as dough strengtheners and emulsifiers. They are digested to fatty acids, glycerol and succinic acid, all normal dietary components, and show no toxicity at use levels. Only E472a to E472f are authorised in the EU; the succinylated form is permitted in some other countries.
