Curdlan (E424): What It Is and Is It Safe?

Gelling Agent
A linear beta-1,3-glucan produced by bacterial fermentation with Agrobacterium biovar. It forms firm heat-set gels and is used as a gelling and texturising agent; it is not digested and passes through the gut as insoluble fibre. EFSA's 2024 safety evaluation raised no safety concern, and it is approved in the US, Japan, Korea and Taiwan.
