Chlorine dioxide is a gaseous oxidising agent used in some countries to bleach and mature flour rapidly. Bleaching oxidises flour pigments and reduces some nutrient content, including vitamin E, and the agent reacts with flour constituents to form minor by-products. It is not authorised as a flour-treatment food additive in the EU or UK.
