Calcium bromate is an oxidising flour-maturing agent that acts through the bromate ion, the same reactive species as in potassium bromate. Bromate is genotoxic and causes kidney tumours in animals, and IARC classifies bromate as possibly carcinogenic to humans (Group 2B). It is not authorised as a food additive in the EU or UK.
