Ester of stearyl alcohol (C18 fatty alcohol) and tartaric acid. Used as an emulsifier in bakery products and as a flour treatment agent to strengthen gluten networks, improving dough stability, gas retention, and bread volume. Considered safe by EFSA at permitted levels.
