Chemically modified lecithin in which some unsaturated fatty acid double bonds are hydroxylated with hydrogen peroxide, increasing its water-dispersibility and emulsifying efficacy in aqueous-continuous emulsions. Used where standard lecithin would be less effective. Considered safe by EFSA and FDA.
