Starches treated with specific food-grade enzymes (amylases, pullulanases, transglucosidases, or others) to selectively modify their structure, reducing viscosity, improving clarity, or creating specific functional properties such as resistance to retrogradation. The enzymes used are themselves food-grade and are inactivated after treatment. Considered safe by EFSA.
