Natural clay mineral from the smectite group (mainly montmorillonite), formed from volcanic ash. In food processing, principally used as a clarifying (fining) agent in winemaking, binding to proteins and tannins that would otherwise cause cloudiness. Passes through the body without being absorbed. Considered safe at food contact levels by EFSA.
