Potassium bicarbonate (KHCO₃). A sodium-free alternative to baking soda widely used in low-sodium baked goods. Releases carbon dioxide when heated or combined with acid to leaven dough. Also used as a mild antacid. Considered safe by EFSA and FDA. As with E501I, potassium content is relevant for individuals with kidney disease on potassium-restricted diets.
