Sodium bicarbonate (NaHCO₃) — the classic household baking soda. Releases carbon dioxide when it meets acid or heat, causing dough and batters to rise. One of the oldest and most widely used food additives with an excellent safety record. Also used as a mild antacid. People on very low-sodium diets should be aware it contributes sodium.
