Ammonium salt of polyphosphoric acid. The least common polyphosphate food additive. Used similarly to other polyphosphates for water retention and stabilisation. Cumulative phosphate concerns apply. Provides ammonium which is converted to ammonia and excreted; this may be relevant for individuals with urea-cycle disorders or severe liver disease.
