Gum Ghatti (E419): What It Is and Is It Safe?

A tree-exudate gum from Anogeissus latifolia, built from arabinogalactan-type polysaccharides. It functions as an emulsifier and stabiliser, particularly for oil-in-water emulsions, and is fermented like other soluble fibres. It carries FEMA GRAS status in the US with no evidence of toxicity at food-use levels.
