A polysaccharide isolated from the cell walls of baker's yeast, composed mainly of branched beta-glucan and mannan. It thickens foods and stabilises emulsions and is fermented in the gut like other dietary fibres. Toxicology reviews support its safety at food-use levels, and the US FDA authorises it under 21 CFR 172.898.
