Isopropyl citrate is a mixture of isopropyl esters of citric acid used as an antioxidant synergist and sequestrant that chelates trace metals to slow the oxidation of fats and oils. It is effective at low use levels and is regarded as safe at those levels. It is not authorised as a food additive in the UK or EU.
