Lecithin citrate (E344): What It Is and Is It Safe?
Lecithin citrate is a citric acid derivative of lecithin used as a metal-chelating antioxidant synergist and emulsifier, mainly to protect fats and oils from oxidation. It combines the emulsifying action of lecithin with the metal-binding action of citrate. It is not authorised as a food additive in the UK or EU, and no specific safety concerns attach to it at the low levels used in food.
