Dipotassium Tartrate (E336II): What It Is and Is It Safe?

Safe Acidity Regulator / Stabiliser

The di-basic potassium salt of tartaric acid (K2C4H4O6). More soluble and less acidic than cream of tartar. Used as a buffering agent and stabiliser, particularly in winemaking to inhibit tartrate salt crystallisation in the bottle. Provides potassium. Considered safe by EFSA.
