Buffered Vinegar (E267): What It Is and Is It Safe?

Preservative / Acidity Regulator
Buffered vinegar is vinegar whose acetic acid has been partially neutralised with food-grade bases to raise its pH, so it can preserve foods and regulate acidity without strongly souring them. EFSA concluded in 2022 that there was no safety concern at the proposed uses, and the EU authorised it as E267 through Commission Regulation 2023/2086. It is a clean-label alternative to conventional preservatives.
