The anhydrous or trihydrate sodium salt of acetic acid (CH3COONa). Used to control pH, impart a mild vinegar-like sharpness, and extend shelf life by inhibiting mould and bacterial growth. Found naturally in fermented and pickled foods. Completely safe at food use levels.
