Pure synthetic or fermentation-produced beta-carotene, chemically identical to the natural form and a precursor to Vitamin A. The most commonly used individual carotenoid colour. Considered safe at food use levels. Note: high-dose supplemental beta-carotene has been linked to increased lung cancer risk in smokers in clinical trials, but this is not relevant at the trace doses used as a food colour.
