Ethanol serves as a carrier and extraction solvent for flavourings, colours and other additives, and as an extraction solvent for food ingredients. It is a normal dietary and metabolic substance, rapidly oxidised in the liver, and carrier use leaves only trace residues in finished foods. EU and UK law permit ethanol as an extraction solvent under Directive 2009/32/EC at good-manufacturing-practice levels.
