Lipases (E1104): What It Is and Is It Safe?

Safe Food Enzyme / Processing Aid

A group of fat-hydrolysing enzymes that release free fatty acids from triglycerides. Used in cheesemaking to develop authentic complex flavours (essential in Italian cheeses such as Parmigiano-Reggiano and Pecorino). In bakery products, lipases improve dough extensibility, crumb softness, and shelf life by modifying flour lipids. Derived from animal sources (pancreatic lipase) or microbial/fungal fermentation. May be animal-derived, which is relevant for vegan products. Considered safe by EFSA and FDA.
