Proteases (E1101): What It Is and Is It Safe?

Safe Food Enzyme / Processing Aid

A class of protein-hydrolysing enzymes with diverse food applications: meat tenderisers (papain from papaya, bromelain from pineapple); cheese-ripening acceleration; chillproofing beer; bread making (controlled gluten weakening); and production of hydrolysed plant and animal proteins for flavouring. Largely inactivated by cooking temperatures. Considered safe by EFSA and FDA.
