Alitame (E956): What It Is and Is It Safe?
Alitame is a dipeptide-derived high-intensity sweetener made from L-aspartic acid and D-alanine, roughly 2,000 times sweeter than sucrose. JECFA evaluated it and established an acceptable daily intake, finding no significant safety concern at expected use levels. It has never been authorised as a food additive in the EU or UK, though it is approved in countries such as Australia, New Zealand and China.
