Nitrosyl chloride is a reactive gas formerly used as an oxidising flour bleaching and maturing agent. Like other nitrogen-based flour gases it has been discontinued and removed from permitted-additive lists in favour of ascorbic acid and natural flour ageing. It is not authorised as a food additive in the EU or UK.
