Ferrous Hexacyanomanganate (E537): What It Is and Is It Safe?
Ferrous hexacyanomanganate is a coordination complex of the ferrocyanide family used as an anti-caking agent, historically in salt. As with the authorised ferrocyanides, the cyanide is tightly bound within the complex and is not biologically available, so the compound is essentially inert at food-use levels. It is poorly characterised toxicologically relative to the sodium, potassium and calcium ferrocyanides.
