Potassium Carbonate (E501I): What It Is and Is It Safe?

Safe Acidity Regulator / Raising Agent

Potassium carbonate (K₂CO₃). Used as an alkaline raising agent and acidity regulator. Key ingredient in traditional German Lebkuchen (gingerbread) and in the production of some cocoa powders. Also used in the preparation of some Asian noodles to achieve characteristic elasticity and flavour. Provides a source of dietary potassium; people with kidney disease who must limit potassium intake should note its presence.
