Amidated Pectin (E440II): What It Is and Is It Safe?

Safe Gelling Agent / Stabiliser

Chemically modified pectin produced by treating pectin with ammonia under controlled conditions, converting some carboxyl groups to carboxamide groups. More tolerant of calcium concentration variations, sets at a lower temperature, and produces softer and more elastic gels than standard pectin. Preferred for reduced-sugar and sugar-free products. Provides the same dietary fibre benefits as standard pectin. Considered safe by EFSA and FDA.
