Calcium lactobionate is the calcium salt of lactobionic acid, used as a stabiliser, firming agent and calcium source, notably to keep instant pudding and dessert mixes firm. It is well tolerated and supplies bioavailable calcium. It is not authorised as a food additive in the UK or EU, but is listed by the US FDA as a firming agent.
