Oxystearin (E387): What It Is and Is It Safe?

Safe Sequestrant

Oxystearin is a mixture of partially oxidised and hydrogenated glycerides of stearic and other fatty acids, used as a sequestrant and crystallisation inhibitor to keep vegetable oils clear at low temperatures. JECFA has evaluated it and it is considered to have low toxicity at the levels used in food. It is not authorised as a food additive in the UK or EU.
