Ammonium malate (E349): What It Is and Is It Safe?
Ammonium malate is the ammonium salt of malic acid, a fruit acid found naturally in apples, used as an acidity regulator and buffer to control tartness. Malate is a normal intermediate of the body's energy-producing citric acid cycle and is readily metabolised. It is not authorised as a food additive in the UK or EU, although the related sodium, potassium and calcium malates are.
