The tri-basic potassium salt of phosphoric acid (K₃PO₄). A strongly alkaline compound used as an acidity regulator and sequestrant. Less commonly used in food than the mono- and di-basic forms. Cumulative phosphate and potassium concerns apply, especially for those with kidney disease.
