The tri-basic sodium salt of citric acid (Na3C6H5O7). The most alkaline of the sodium citrates. Used as a buffering agent, emulsifying salt in processed cheese, and in effervescent products. Completely safe in food use. People on very low-sodium diets should note its sodium content.
