Ethyl Gallate (E313): What It Is and Is It Safe?

Ethyl gallate is the ethyl ester of gallic acid, an antioxidant related to the permitted gallates. It is not authorised as a food additive in the EU or GB, where only propyl gallate E310, octyl gallate E311, and dodecyl gallate E312 are permitted. Gallates can occasionally cause contact hypersensitivity.
