Sodium 2-Phenylphenol (E232): What It Is and Is It Safe?

Moderate Preservative / Surface Treatment

Sodium salt of 2-phenylphenol. More water-soluble than E231, enabling application in aqueous dipping solutions to citrus. Converts to 2-phenylphenol on the fruit surface. Same concerns apply, wash citrus thoroughly before using the zest. Same IARC Group 2B concern as E231 applies.
