Copper-complexed form of chlorophyllins — the water-soluble derivatives of chlorophyll. The copper replaces the magnesium in the porphyrin ring, creating a more heat- and light-stable green pigment than plain chlorophyll. Copper content in food from this source is negligible. Considered safe by EFSA at normal food use levels.
